Started a keto diet and finding everything a bit overwhelming? Here is a keto recipe that isn’t just yummy, but also easy to make and time effective.
- 1 Avocado, cut in half and stone removed
- 1 tablespoon of butter (salted)
- 3 Stripes of bacon, cut into small pieces
- 3 large Eggs
- Salt and Black Pepper
Step 1: Scoop out most of the avocado flesh, leaving about ½ inch around the avocado.
Step 2: Place a large saucepan on a low heat and add in the butter. In the meantime crack the eggs into a bowl and whisk them, adding both salt and pepper. (You can also add any other spices that you want)
Step 3: Add the bacon to one side of the pan and let them fry for a couple of minutes on their own. Then add the eggs to the other side of the pan and stir regularly as they scramble. The eggs and bacon should both be done 5 minutes after the eggs are added to the pan. If you find you eggs are done a little before the bacon, remove the scrambled eggs from the pan and place in a bowl.
Step 4: Mix the bacon pieces and scrambled eggs together in a bowl, then spoon into the avocado bowls.
Step 5: Enjoy your healthy breakfast.
